Thin Mints
Almond Fudge with Thin Mint crust

Yield: 10 servings

3lbs 4 ½ oz            Toasted almonds
11 ¼ oz                  Milk chocolate
7 ½ oz                    Honey
1 lb 2 3/4 oz           Sugar
17 ½ oz                  Corn Syrup
22 ½ oz                  Cream
28 each                   cookies
2 oz                        melted butter

1.    Crush thin mints and mix with melted butter and pack firmly onto a parchment lined sheet pan.

2.    Caramelize honey, sugar and corn syrup.

3.    Deglaze with warm cream

4.    Bring mixture to 235*

5.    Strain over nuts and chocolate

6.    Pour over cookies

7.    Let sit overnight to harden

8.    Cut and serve
