TRY THIS FRESH YUMMY LOW-FAT FIX: Curried Turkey Salad with Walnuts. WHAT YOU NEED: 1 1/4 lbs. boneless, skinless turkey breast; 4 tsp. curry powder; 1 1/3 cups low- or non-fat or sugar-free yogurt; 4 cups red or green grapes; 12 cups mixed greens; 4 Tbsp. olive oil and vinegar dressing. HOW TO PREPARE IT: Cut turkey into bite-sized cubes. Heat a non-stick skillet to medium high and coat with cooking spray; sauté turkey cubes 4 to 5 minutes until thoroughly cooked; remove and let cool. Mix yogurt with curry power. Cut grapes in half. Mix cooled turkey and grapes with seasoned yogurt. Cover and refrigerate for at least 15 minuetes for flavors to blend. In the meantime, dry and shred salad greens. In a salad bowl, toss greens with dressing and place on a dinner plate. Remove turkey mixture from refrigerator; place on top of salad greens. Sprinkle salad with walnuts and serve.
